Apple Harvest Begins with an Homage to Johnny (Appleseed that is)

While History has an inevitable way of dumbing down the complexity of human nature, most of us have gotten the memo by now that there was more to Johnny Appleseed than we were taught as children - the proto-hippie who wandered the American mid-west barefoot and barely clothed, randomly throwing apple seeds everywhere he went. To my mind the engaging pragmatism of John Chapman’s story is what makes him most fascinating, starting with the fact that far from random his travel routes across Pennsylvania, Indiana and Ohio were guided by the expectation of settlements spurred by the great migration west.  

When his seeds pushed their way up through marginally tilled hard scrapple dirt and managed, with no irrigation save rainfall, to grow, he fenced them into orchards which he then rented, bartered or sold to new settlers at a time when having a standing orchard of apples and pears was often a prerequisite for claiming ownership of land. 

Another pre-requisite to survival - though more a cultural imperative than a legal one - was the ability to have a cheap and easy way to make hard cider, “the nectar of the frontier.” Yet though he was responsible for propagating most of the wild apples across the mid-west used to make booze, Johnny himself did not drink. Nor did he marry. Nor did he care about possessions, though at the time of his death he was technically a “wealthy” landowner.

Set against the modern model of an entrepreneurial American, though he obviously had a businessman’s brain in that tousled head, grace and salvation, not greed, was what motivated and defined Johnny Appleseed.

Interesting fellow. Even the tin pot he wore on his head was more canny than crackpot - it was simply the easiest way to carry his main cooking implement.

The definition of a wild apple is one propagated only by seed, what we commonly call crabapples. In another lifetime, when wine barrels and cider stills could be found down most dirt roads in Mendocino there was a crazy quilt orchard of crabapples on our ridge, pulled out, along with all our wine grapes, during prohibition. The single crabapple tree that survived probably only got a reprieve because it was near the kitchen garden - Pectin rich, crabapples were often used in jams to thicken them. 

What makes crabapples great for cider is what makes them horrible for eating. They are small and knobby, usually sporting a blemish or three. They are bitter, with very little flesh on them. But oh are they great for developing flavor as they ferment.

 We managed a full case of crabapples this year from our single antique tree, and with a new project looming at the barn that will explore less familiar tastes and aromas in food and wine, I was curious what the kitchen could do with them. The flavor profile is intriguing - tart like a Greening, crisp like a Mac, but without almost any residual sugar. Our long suffering pastry chef Octavio Alcazar (who just got through processing a ton of figs from our harvest which come in all at once) choose to poach them, devising a liquor he hoped would soften the tannins while teasing out more subtle flavors.

He used La Vielle Ferme Recolte, a white Rhône from Chateau Beaucastel, threw in a handful of vanilla beans, lemon peel and bay leaf. This mélange brought out surprising floral notes to the crabapples, while the flesh – the little there was of it - retained a curiously crisp bite. 

Instead of a classic pairing with pork or duck, Chef served a trio of poached crabapples alongside another old-timer making its brief seasonal appearance in the dining room this month, the heavenly Gravenstein. 

The Gravenstein is a very special apple - a cultivar that started its life as a chance seeding in Denmark almost 400 years ago.

Brought over to California by Russian fur traders who landed in Fort Ross in the early 1800’s, Gravensteins took root and thrived in Northern California for generations - especially prolific in Western Sonoma County.  

Sweet yet tart, they are incredibly delicious cooked into pies and sauce, excellent for juice and cider.   

Sadly, because they are difficult to harvest and do not keep well, Gravensteins* were one of many apples that began to disappear with the great American dumbing down of fruit and vegetable varieties which followed the rise of commercial farming - though in this particular case Gravensteins orchards were not pulled out to plant other apple varieties so much as to make way for grapes.

We run through our precious supply of dry farmed Gravs from the ridge pretty quickly, but the week the crabapples made their appearance we were still baking light and fragrant Gravenstein tarts for the dessert menu. Octavio devised a delicately spiced flakey crust, baking the apples until just their edges begin to caramelize. We finish the tart with a light dusting of confectioner’s sugar and serve it with a creamy scoop of refreshing Wyeth Acre Goat Milk Ice Cream which I wrote about a few weeks back and is fast become a dining room favorite.  Already a wonderful dessert, the crabapples added a bit of gravitas (sorry, couldn’t resist). 

Gravenstein Apple Tart with Wyeth Acre Goat Milk Ice Cream and Poached Crabapples - our humble homage to the unusual historical figure of Johnny Appleseed- may be gone by the time you read this, but apple harvest is just picking up steam. Pink Pearls and Macintosh arrived this week (along with the first of the Asian pears and red and gold Bartletts) so no worries, our apples will continue to make an appearance in one form or another in the dining room through Fall.

And Daniel and Lukka have once again entered Barndiva Farm in the Mendocino County Apple Fair where we won quite a few ribbons last year. If you’ve never been to a real country fair and you’re in striking distance to Boonville this Sept. 12-14, don’t hesitate. Country Fairs are a great way of supporting family farms, especially young farmers, and of keeping food and sustainable farming traditions alive.

If you can’t make it up to Mendocino in Sept. but crave a taste of apple cider history, come in and sidle up to the bar where Rachel, Sarah and George will be happy to pour you a flight of handcrafted apple ciders made right down the road from us in Sebastopol by the Devoto Family,  organically farming heirloom apples since 1976. One of their ciders is made from 95% Gravensteins.  A real treat, one you can enjoy all year. Come on in and raise a glass to Johnny. 

* While Gravenstein production will never return to Sonoma County in any great numbers, it is now highly sought after thanks in great part to the efforts of The Russian River Slow Food Convivium, who helped get the Grav into Slow Foods vaunted Arc of Taste in 2013.  Wherever you call home, The Arc of Taste is a wonderful thing to support. Barndiva Holiday Nog with Madagascar Bourbon Vanilla Foam

The recipe for the elegant and light(ish) Egg Nog we will serve in the Barn this Christmas Eve comes to us courtesy of our new star behind the bar, Rachel Beardsley. Actually, it comes thanks to a desire on Rachel's part to continually up her game at Holiday time so her Japanese grandmother Masuyo ~ not a big fan of heavy cream and alcohol ~ can enjoy one of the richest traditions on offer this time of year.  Masuyo's not alone in craving the wonderful flavors of yule time without the cloying, hangover-in-the making qualities that too often come along with them.

All the usual suspects are here: spiced rum, full cream (cut with milk), nutmeg, vanilla and eggs. By reducing the amount of cream and using only the finest ingredients, in this case Madagascar Vanilla and whole Jamaican nutmeg, Rachel's small but significant swaps result in a wonderful Holiday concoction.  Crucial to the drink's success is using organic free range eggs in the Nog, then hand frothing the egg whites for a foam that is light but creamy. (Blenders tend to flatten and compress the ingredients.) With this Nog, less is deliciously more, a refinement you don't have to be a Japanese grandma to applaud.

Mix the ingredients together in a shaker or blender and chill.  Just before serving, add the vanilla to the egg white and whip until you produce a cloud-like frothy foam. We use a spiral whip in a glass shaker which is more a pogo move, easier on the wrist.  Pour the chilled Nog into a pretty glass, spoon on the vanilla foam, grate the nutmeg. You can make this Nog in batches but don't foam more than two egg whites at a time.  (Save the yolks for Christmas cakes or stuffing.)

Rachel will be whipping up her Holiday Nog behind the Bar on Christmas Eve ~ consider this an invitation to come by the Barn for a tipple, whatever your plans are for the night!  It's a real treat.

Recipe for Rachel’s Holiday Nog with Madagascar Bourbon Vanilla Foam

1 oz brandy (Korbel) 1 oz spiced rum (Sailor Jerry) 3 oz whole milk 2 oz half & half 1 whole organic egg 1 1/2 oz simple syrup

Vanilla foam: 1 egg white Scant 1/4 oz Madagascar bourbon vanilla (most vanilla comes from the same varietal ~V. planifolia ~ from Madagascar and the West Indies, but quality varies. As with any spice, invest in the best you can find.)

Grate a light sprinkling of nutmeg over the drink

There are a lot of knives in the world ~ and almost as many opinions as to what constitutes a great one. Weight and balance, type of steel, heat forged or stamped ~ they’re all critical components. But for us, in deciding what to sell in the Studio, where the knife is made and by whom is the deal breaker.  We are not mindless fanatics that just because something is old it’s good, but with certain objects ~ textiles and knives especially ~ traditional fabrication techniques carry the fingerprint of history, traces of who we once were and what we knew, which we would be wise not to lose.

Berti knives have been made by the same Italian family since 1865. While they have kept up with the times by continually refining their sinuous ergonomic designs, they have done so while adhering to a founding principal that reverently guides how each knife is made: every Berti knife is signed by the single artisan that handles it from start to finish. There was a very good reason we did not publish Eat the View last week as K2,  crucial to uploading all the images and pictures for the blog  (in addition to creating many of Barndiva's stunning graphics) was rather busy plating her own Dish of the Week... one she's been cooking up for  the last nine months.  Meet Atticus Gordon Petrie,  the newest member of our ever expanding, extremely beautiful Barndiva family. You & Mother Jus

‘You are what you eat’ is food politics 101, impossible to refute, but not far behind when it comes to the emotional vocabulary we use to describe food experiences is the truism ‘you are what your parents fed you.’  For generations like mine, who grew up in houses where someone cooked every day, the inexorable slide into a world where fewer and fewer people can make a meal from scratch is pretty shocking. And sad. Instead of a family's unique food traditions more and more formative food memories now seem to come, fully formed, from the same folks who have a vested interest in selling the corporate food culture.

Beyond the serious issues of how that culture may be compromising our health (if you ever truly get beyond them), there’s a significant qualitative difference between food memories created when people make the time to sit down together and eat a meal made from real ingredients and the default dining that's become a mainstay of the new American diet which is little more than a simulation of a home cooked meal, pseudo-foodstuffs you eat on the run or in front of a screen.

When Chef proposed Au Jus for the blog this week, neither of us was thinking of the Arby’s empire, or even the vast number of diners and truckstops that have sold Beef Au Jus sandwiches since they became popular in the 50’s. We were thinking in French, as we often do when it comes to the kind of food we cook. A direct translation of Au Jus is ‘of the juice,” with the clear reference being ‘the juice’ of the animal ~ usually lamb or beef ~ you are cooking. Once upon a time using every part of an animal meant survival; used correctly it's a term which should infer access to whole animals, which fewer and fewer restaurants have the skill or take the time to accommodate anymore.

 I have no idea where the ‘beef taste’ in the standard Au Jus served with millions of beef sandwiches bought and consumed every day comes from, but I’m willing to bet the farm there is no connection whatsoever between that sauce and the piece of meat you end up eating it with. This isn’t a rant against bouillon cubes, which we all resort to from time to time, but a reminder that even the ones that promise they are made from 'quality' ingredients are primarily salt, color, and a mix of artificial and hydrolyzed natural flavorings. (FYI: the most common way to hydrolyze a protein is to boil it in a strong acid triggering a chemical breakdown that results in the formation of "free glutamate," which, when joined by sodium, makes MSG. When added this way, the FDA does not require the label to list it as such.)

Which is not to say you need a whole side of beef in the kitchen to make a decent Au Jus at home. Sauté a piece of meat with a few diced veg, skim the fat, squirt some wine in the pan, scrape up the delicious bits clinging to the sides, and you’re good to go. (Add flour and you have a decent gravy.)

But Classic Au Ju, the way we make it here, is something else again. Everyone in the kitchen knows the various stages it goes through by heart and everyone pitches in to make it. Ryan's recipe was adapted from his mentor Richard Reddington, similar to one Daniel Boulud is known for  ~ all three men incorporate a bone stock and a trim sauce, with each contributing different aromatics. They also make use of a 'Mother Jus', which is simply the saved composite of past Au Jus, in much the same way a great balsamic comes from a mother starter, as do bread and yogurt. If you love meat Ryan's Au Jus is liquid Nirvana, more vegetal than starchy, semi-transparent with a rich caramel color, dense with flavors that compress the essence of the protein. Woven throughout are fragrant, rooty aromatics. The images below document the stages from trim sauce to finish ~ directions for the bone stock follow.

The Au Jus is ready. At Barndiva we finish it with a knob of butter and a zoosh of sherry vinegar which brightens the meaty flavors and lifts the wine, tomato, fennel and all the aromatics.

The importance of  roasting the bones and making them into a stock that is combined with the trimmings sauce and the Mother Jus can’t be overstated ~ the natural thickness of the final sauce is a direct result of the gelatin released from the collagen in the bones, the tendons, sinew, and connective tissue. Roast the bones for 1-2 hours at 350, then add to a stock pot in which mirepoix has been sautéed and combined with water, tomato paste, bay leaf, garlic, cloves, black pepper, and thyme. The bone stock is simmered for six hours, strained and reserved. The sauce made from the trim, detailed above, takes about 3 hours.

Ah Coco, une femme douce, a lady we always love to hear from, especially when a new container arrives from France. This one had some gems ~ including cast iron heads that looked like they'd survived a hundred years of trial by fire which, in fact, they did. Cut from fireplace dogs from the 1920's on, most come in pairs which make beautiful bookends. Singly they are wonderful, unique pieces. Coco tells us the vases were part of an elaborate 19th Century garden wall, pitted and burnished a gorgeous old penny bronze. Heads: $75 Vases (only two left): $100

File this under "We're not the only ones around here still doing things the old fashioned way."

On Sunday we took a ride out to the Preston's to see how they were getting on with their new apple juice press. If you haven't been to Lou and Susan's beautiful farm and winery on West Dry Creek in a while, go soon, before the rains set in. Their new indoor farmstand ~ with select pieces of Susan's indelible art ~  is almost finished, built to go year round with room for drying and storing. Out in the fields there are still lots of tomatoes on the vines and vegetables growing in the various gardens. This is a great place to bring the kids, to walk and talk to them about everything you see. Keep an eye out for the traveling Hen House Gypsy Wagons where you'll find the pigs rototilling the soil, chickens not far behind (the better to picks up any delicious morsels those pig snouts miss).  The way animals co-habit at Preston Family Vineyard could teach our elected officials in Washington a thing or two about getting along. A hand turned apple press is simple to use.  A lined, wood slate bucket catches the chopped apples, when it's full you slide the bucket under the press.  The handle is connected to an Acme Thread Screw which is attached to a plate that as you turn applies pressure to the apples. All you do is turn the handle until the juice stops running. Fresh Preston Apple juice is available in the new farmstore while it lasts. Their custom Oak press is made by Correl Cider Presses.

Gravenstein Apple Pepper Relish

Jammin’ is all about hanging out in the kitchen with people you like. Sure, your goal is filling the larder for Winter with the best of what you've grown or sourced from Summer to Fall, but to get the stuff in the jars you will spend an inordinate amount of time peeling, cooking, and waiting for those jars to boil. The better the company, the sweeter the ride; the more love in the jar, the better the product.

So I was particularly lucky when Daniel Carlson graciously offered to help me turn the last of our Gravenstein’s into Chef’s Apple Pepper Relish this past week. Dan is the lovely young man helping Lukka expand the gardens at the farm, where we are at the crucial stage of ordering ground cover and setting out a new and greatly expanded planting schedule for next year. It wasn't lost on either of us that the gabfest that ensued was all about what we'd be stirring in these very same pots next year.

While canning and jamming is not a solitary art, mindful it most certainly is.  There came a moment with each batch when we stopped talking, looked deep into the cauldron, and asked in timorous voices the question only masters of the form ever have an easy answer for...'are we there yet?' Knowing the answer takes more than practice.  No matter how rigorously you stick to Grandma’s recipe, if she's still around Grandma would be the first to tell you that each particular batch of fruit is bound to react differently when it hits the pan. This recipe is a case in point: it only calls for four ingredients ~ sugar and vinegar, heirloom apples and peppers ~ but the flavor of the final product is all about developing a talent to play the alchemist when it comes to heat and timing.

You start by making a gastrique ~ but where a normal gastrique only uses vinegar to cut sugar that's been caramelized in water,  in this case you eliminate water and use vinegar to caramelize the sugar. This intensifies the flavors of the syrup in a way that downplays the sweetness of the sugar, allowing the apples and the peppers to shine.  Chef uses Champagne vinegar because it's bright yet mild enough not to step all over the fragrant subtleties you hope to get from the apple-pepper combo.

Apples have a good percentage of pectin, a natural thickening agent, but they also throw off a lot of juice.  Success is all about keeping a vigilant eye, knowing what you are looking for ~ that brief moment when a wooden spoon pulled slowly across the bottom of the pan moves easily through the golden amber syrup, but takes a second longer than it just did to roll back and cover its tracks. If you put the apples and peppers in before you reach this point, when the apples release their juice you'll have to wait for the syrup to thicken again, during which time you risk overcooking the apples. Lose that soft crunch and you lose a key element in what makes this deceptively simply relish so special.

This relish is meant to star our dry farmed Gravenstein's, but any good quality cooking apple will make a nice relish. You can also use any variety of pepper so long as you stay on the sweet side ~ the bite from this relish comes from the vinegar. This is NOT a pepper jam, it’s an apple relish that’s danced in the pan a bit with heirloom peppers. Big difference.

How you cut the fruit is also crucial in the way it affects cooking time and the final look of the relish. We peel the peppers, cutting them into a perfect brunoise. We grate the apples with their pectin rich skin on, before crosscutting them into the same size as the peppers. Invest in a good mandolin ~ Ryan prefers Japanese to French ~ no kitchen should be without one. Yes, they take a bit of getting used to and yes, you will probably shred some skin along with the apples if you take your eyes off the prize for even a second. (They come with a guard, but it's pretty useless). A mandolin, as opposed to a grater, will give you uniformity and a cleaner edge to the cut fruit. Work quickly once you start cutting the apples so you can add them to the syrup before they oxidize and discolor.

The recipe below is for a small batch ~ the better to control the viscosity of the syrup ~ but double it if you hope to still have some left by Christmas because it will go. It's that delicious.

Simple Apple Pepper Relish one sweet red pepper five large (or six smaller) apples 320 grams champagne vinegar 320 grams fine baking sugar

In a large sauce pan, add the sugar to the vinegar and stir until it dissolves, then let the syrup simmer until you reach the moment described above. Add the brunoise of apples and pepper and bring them to a soft crunch stage which should occur right about the time the gastrique has thickened again. Pour into sterilized jars and follow directions using the standard hot water bath process for hot packing hi-acid fruit. Cool and check to see the tops have sealed.

 If you plan to refrigerate the relish and use it within a few weeks,  you can back off to 300 grams each of sugar and vinegar which results in a relish on the drier side, the better to quenelle and serve with lamb or fish.

Ferdinand Thieriout, the former Yorkville glassblower who has supplied us with a distinctive range of bowls and vases for the past two years, stopped by the Gallery this week with his beautiful family and two boxes full of his coveted 'bubble' bowls which we'd completely sold out of. In a style that references 60's Mad Men glamor with a spare Swedish approach to color,  these are functional pieces of art, equally stunning displayed on their own or filled with salad and veg.

The large salad bowls come in two shapes; both have the distinctive red radish lip, while the smaller fruit bowls are edged in a variety of beautiful colors: Saffron, Forest, Ruby, Denim & Ivory. Prices range from $85. FYI: Due to his move to Little River this month, Ferd informs us this will be our only shipment before Christmas.  He should have a new Studio up and running (there's talk of it being mobile!) early next year.

Raising the Barn: An International Aesthetic Meets the Best of Wine Country's Heartland

The perfect evening out brings together three elements: a delicious meal, a warm atmosphere and lively conversation. For Jil Hales, the proprietor of Healdsburg’s Barndiva restaurant, the bar is set significantly higher because the bar is where it all began.

“We came to Healdsburg eight years ago, after raising our kids in the U.K. and living in San Francisco for a few years,” says Hales, a Los Angeles native married to Geoffrey, a Brit, who brought his hardwood flooring company to the U.S. “What this town was missing was a world-class bar—a place to get a cocktail and a bite to eat late at night.”

While the Hales were dividing their time between London and a fruit farm in Anderson Valley that Jil has owned for 30 years, they bought a property just off the town square in Healdsburg and built a two-story barn from the ground up. Downstairs, the bar and restaurant serve the best cocktails in town and an ever-evolving menu of farm-to-table dishes. Upstairs is the Hales’ pied-à-terre. Acting as general contractor and chief designer of the barn was an all-encompassing project, and Jil lived up to the nickname her friends had given her when she first moved to Anderson Valley: the Barn Diva.

Adapting the name to her new venture, Jil’s restaurant suitably hits a few high notes. From the outside, the building suggests a familiar rural vernacular—it’s a single structure with richly stained board-and-batten siding. Inside, the towering space is a sophisticated mix of travertine floors, wood tables, a colorfully lit bar and cream-colored walls adorned with modern art and antique farming tools. Out back, an enclosed garden is set with tables, big rustic sculptures and a trickling water feature; overhead mulberry trees are draped with twinkling fairy lights and a heritage black walnut offers dappled shade during the day.

The pied-à-terre upstairs, which is accessed through the front door tucked alongside the restaurant’s entry patio and up a Dan Flavin-esque staircase with rainbow fluorescent risers, is even more of a surprise. It feels like a loft in Tribeca rather than a barn apartment in Sonoma County. The voluminous main room is centered on an oval dining table surrounded by red leather Eames Executive chairs. On one side a 16-foot-long kitchen island is topped with another fluorescent-lit bar (the prototype for the bar downstairs). The kitchen itself is an updated take on the European unfitted kitchen, with open storage, several sinks and a formidable black-enamel Lacanche range. A built-in bar adorned with Jil’s favored Tunisian ironwork, more classic midcentury furniture and artwork collected from around the world complete the scene in the main space. On one end is a guest bedroom and office mezzanine, and on the other is a master suite.

Two-and-a-half years after completing the barn, the restaurant was bustling on evenings and weekends, and Jil was ready to raise the bar even higher. The Hales’ life in Healdsburg had become increasingly focused on the community around them as they supported local vintners and farmers. But Jil’s passion for art and design needed an outlet, and the four walls of the restaurant were filled. So in 2007 she opened a gallery next door in a space that was formerly an opera house. Artists & Farmers, as it was originally called (now Studio Barndiva), was a place to celebrate and sell the art and designs she discovered locally or on her many travels. On display is an assemblage of Hales’ own lighting made from Tunisian architectural salvage along with locally crafted paintings, wire sculptures, blown glass, reclaimed wood furniture, imported gifts and accessories. “I don’t want to show things that can be easily found somewhere else,” says Hales, pointing out one exception: aselection of John Derian back-painted glass plates. “I know he’s in lots of other shops, but he’s a friend.”

Behind the gallery is yet another garden. This one is filled with raised vegetable beds, outdoor sculpture and a table large enough to seat 200 under an armature designed for a canopy of mini-globe lights. Like the garden on the other side of the fence, the setup begs for a modern country wedding and it’s been a popular spot for such events since it opened. In fact, Geoffrey and the couple’s eldest son, Lukka, run Barndiva’s event and hospitality business, and they’re now averaging 60 weddings a year. The Hales have also taken over management of the nearby Healdsburg Modern Cottages, four nightly cottages authentically furnished with pieces by Eileen Gray, George Nelson, and Ray and Charles Eames.

In her mission to open a world-class bar in this sleepy town, Jil has elevated the creation of the perfect evening to an art form. “I went for the type of environment where I would want to share a meal or toast a special occasion with friends,” she says. “If something doesn’t come from the heart, it just doesn’t work. If you’re not authentic, you’re running on fumes.”

Sitting under twinkling lights, as a parade of seasonal dishes made by Thomas Keller–trained chef Ryan Fancher, original cocktails and wine selected by the in-house sommelier passes by, it would be hard to argue against that.

Both of these recipes make the most of fruit and vegetables in late summer or early autumn, when ingredients are at the height of their season. They are great dishes to source at a local farmers market.

Barndiva’s Heirloom Tomato & Compressed Watermelon Salad Serves 4

1 medium watermelon 1 tsp. lemon verbena 1 large golden beet 1 large Detroit dark-red beet 6 heirloom tomatoes 2 Tbsp. sweet basil 4 Tbsp. Spanish sherry vinaigrette Salt and freshly ground pepper 1 cup purslane (optional) 2 Tbsp. crystallized ginger, diced 2 red radishes

Spanish Sherry Vinaigrette 1 cup grape seed oil 1/3 cup Spanish sherry vinegar A pinch of salt, sugar and freshly ground pepper

The Watermelon - The night before or a few hours before serving, cut into large cubes and sprinkle with the chopped lemon verbena. Wrap tightly in plastic wrap and refrigerate. • The Beets - Cover with 2 cups water, 1 Tbsp. butter, 1 clove garlic and a sprig of thyme. Cover and cook at 350° for 3 hours. Cool and slice. • The Heirloom Tomatoes - Slice them thickly and mix them in with the chopped sweet basil. In a bowl, whisk together all of the ingredients for the vinaigrette. Bathe the tomatoes in 4 tablespoons of the vinaigrette for 30 minutes or more. Season with salt and freshly ground pepper. • Assemble - Stack the tomatoes, largest one on the bottom. Arrange the watermelon. Dress the beets in the bathing vinaigrette, season with salt and pepper, and plate. Sprinkle ginger and thinly sliced radishes over the dish. Dress the purslane, and add it to the dish to finish.   

Herb-Roasted Local Halibut Serves 4

8 baby artichokes 2 Tbsp. canola oil 4 cloves garlic 2 springs rosemary Salt and pepper 20 fava beans 1 zucchini 1 gold bar squash 5 lbs. Roma tomatoes 15 Toy Box cherry tomatoes 2 Tbsp. extra virgin olive oil 4 6-oz. halibut filets 1 Tbsp. butter 1 cup tempura batter 4 squash blossoms

Tempura batter 1/2 cup flour Corn starch 1 tsp. baking powder 1/2 cup sparkling water Salt

The Baby Artichokes - Peel the outside layers to reveal the heart. In a hot pan, roast the artichokes with canola oil, garlic and rosemary until soft. Season with salt and pepper. • The Fava Beans - Peel the favas, and cook them in boiling salted water for one minute. Let cool. • The Summer Squash - Cut the zucchini and squash into diamond shapes, and cook them just like the fava beans. • Vierge sauce - Puree the tomatoes, and strain the clear liquid from the tomatoes through a clean kitchen towel. In a saucepan over medium heat, reduce the liquid by half, and season with salt and pepper. Drizzle extra virgin olive oil. • Halibut - In a hot sauté pan, sear the fish until golden brown, being careful to not overcook. Baste with butter, garlic and rosemary. • Assemble - Pool the sauce in a bowl or shallow plate. Arrange the vegetables in the sauce, and nestle the halibut in the middle. In a bowl, mix the tempura batter’s ingredients, and dress the blossom lightly with the tempura batter. Fry in  350° oil until golden, and place on top of fish.

Anglotti Pasta~ Celery Root Filling

Anglotti Celery Root Filling

2 large Celery Roots 2 tbsp unsalted butter 2 tbsp minced shallot 2 tbsp garlic confit 1 C white wine 2 C cream salt/ pepper/sugar

Peel the celery root and dice into small pieces. Heat the butter in a medium sized sauce pan. Add shallot & garlic. Sweat until translucent & then add celery root. Deglaze with white wine and reduce. Pour cream over celery & simmer on low heat until soft. Season with salt, pepper and a pinch of sugar. Blend until smooth, then chill. Place in a piping bag
