Just as the term ‘farm to table’ should imply a direct connection to an actual place where things are grown, ‘nose to tail’ carries with it a literal meaning: start with a whole animal and render as many parts of it delicious as talent and time allow.

There are great reasons to cook and eat this way. Starting with the extremities and moving through a properly raised animal you have brain, heart, liver, tongue, kidneys, sweedbreads, caul fat ~ all nutritious with incredible potential for tasting delicious. Our ancestors in the food chain saw using every part of the animals they killed as a way to honor the exchange of life for sustenance and warmth. They were also hedging their bets, never sure where or when they'd find their next 'free range' protein rich meal.

Which, sadly, isn’t that far off from where we find ourselves today. Grazing land is a rapidly diminishing resource in the world, while the skills needed to raise and humanely dispatch healthy animals “the old fashioned way,” because of our tragic reliance on CAFO's, has become a lost way of life. For those of us who still have access to pasture raised animals, cooking nose to tail honors every step of the journey that goes from animal, to farmer, to chef, to eater. It encourages us, in the most wonderful way possible, to use as many parts of these precious animals as we can.

But nobody said it was pretty.  In a society that gorges on all manner of evisceration day after day, night after night, on screens big and small, we are still, by and large, squeamish as a nation when looking into the animals we eat. Food blogs are inordinately obsessed with staging only the most beautiful pictures ~ which fun as they are to look at ~  tell an incomplete story. Whatever the disconnect (perhaps fascination with fictional gore allows a certain distance to real death) it's important to post images now and again that honestly document what it looks like to cook the way we do. We do not wish to offend. But for those of us still eating and loving animal proteins raised sustainably, getting as close as we can to the history, the science, and yes, the mystery of why we love eating them is part of the story of our lives.

Mimi and Peter Buckley get this. Their two much admired food production enterprises in Sonoma and Mendocino are deeply respectful of land, animals and people. Front Porch Farm, here in Healdsburg, produces organic fruits and vegetables and Mimi’s great love ~ flowers. Up Hwy 128 in the heart of Yorkville, where they have been renovating the old Johnson spread, Peter and a talented young crew are raising heirloom Cinta pigs.Cintas are classic salumi pigs, usually weighing in at well over 300 lbs at slaughter. But when Ryan heard about Acorn Ranch he began to dream much smaller, about the size of the milk fed pigs he loved to cook at The French Laundry. He wondered aloud if the Buckleys were open to producing something special for us. They were. And so we received two 30 lb pigs a few weeks ago, beautiful animals he set about cooking "through" before inviting Peter, Mimi and their ranch and garden managers to dinner.

Several skill sets are needed for nose to tail cooking, but they all start with great butchery ~ the cleaner and closer the cut, the more protein per lb. Each part of an animal is then prepped and cooked using often laborious techniques where the main objective is teasing flavor out of each cut with an understanding of texture and how each cut will react to heat. It takes optimizing the characteristics of each region of the animal, understanding the way grain runs in sub-primal cuts, fat to muscle ratio, which bones to roast, which to braise. Nose to tail is not a proprietary culture but one about taking nourishing culinary traditions and playing them forward. The techniques Chef relies upon, ones he learned working alongside Richard Reddington and Thomas Keller, key off preparations handed down the centuries from country kitchens where the main objective was to marginalize waste. Chefs of this caliber, while pulling on those traditions, have taken nose to tail taken to a whole new level.

Tête a cochon is a good case in point. It is all about using up the least lovely, hard to get to bits in the head. As Drew broke down the whole animal and went about portioning it, Chef wrapped the head in cheesecloth and slowly braised it in a stock with leeks, apples, white wine, garlic & herbs. He then peeled everything off the bones, discarding the fat and gristle, mixing the soft bits of meat with the thinly sliced tongue and ears. This mixture was then seasoned and tightly wrapped in plastic wrap into a roulade, which he put into an ice bath to start the consolidation of protein and fats, then left to rest overnight in the walk-in. (Another route would have been to pack the softly rendered collection of head meats into a terrine mold and serve them cold.)

As the orders came in the roulade was cut into 1 1/2”discs, brushed with Dijon, dusted with Panko and spices, and sautéed in a bit of butter, garlic and thyme until crisp. Tête is often served with gribiche but Ryan finished this first course dish simply, with a sprinkling of chives and a crispy trail of sublime Acorn Ranch bacon. For a special entrée tasting he did the same night, (our first image, above) he served the chop, belly and shoulder, with a summer spin-off of bacon, blistered tomato and avocado, a brighty acidic, fresh olive tapenade on the side. The shoulder in this dish was one of the best I've ever had, bathed in an sauce he'd made by heating the bone jus with a touch of butter, letting it reduce slowly in the pan while basting to form a beautiful silky glaze.

There is no taking away the initial visceral intensity of watching a dish like this prepared from scratch. But beyond the fact that the tradition of nose to tail produces food which is incredibly nuanced and nutritious, we consider ourselves lucky, if not blessed, to be able to cook this way for you.

Bacon Wrapped Sturgeon

It was great to read Andrew Carmellini’s strident defense of “the long lost art of the arroser” in the New York Times last week as we are big time proponents of this traditional French technique of rapid butter basting to finish proteins. À la minute cooking allows a little butter to go a long way; done right it has the potential to deliver saturated flavor that is as rich as it is nuanced.

Drew’s Dish of the Week ~ Bacon Wrapped Sturgeon with Smashed English Peas and Hedgehog Mushroom Tempura ~ relies on arroser and several other tricks of the trade that make the most of ingredients that are inherently umami, the basic taste profile we define as savory which, crave them as we do, can easily overwhelm the palate. On a scale of 1 -10, sturgeon has the potential to be gloriously satisfying, but without a deft approach to respect its subtle flavor and fragile texture it can easily go dry and bland. Drew’s use of thin strips of raw bacon tightly wrapped around the portioned fish and left to rest in the fridge keeps the cut flesh from drying out. It also lightly flavors the fish, adding a layer of complexity which his cooking method ~ a four sided pan sear ~ extends as the sturgeon slow cooks inside its carapace of sizzling bacon. The result is heavenly moist fish inside a golden crispy outer ‘skin.’

An arroser can use any variety of herbs that will hold up to the heat ~ Drew chose fresh rosemary and garlic for their pungency and green notes. The secret of the technique ~ like many great things in life that have nothing to do with cooking ~ is all in the wrist. You need to move the spoon into and over the pan at a constant speed; this rhythmic basting motion results in dozens of tiny bubbles that aerate the butter. You’re going for foamy butter that does not burn. The fish is then pulled off the flame and allowed to briefly rest while the flavors harmonize, and it finishes cooking.

The earthiness of the hedgehog mushrooms, dredged lightly in tempura batter and deep fried, were an inspired land-meets-sea pairing for the fish, but Drew wanted more ~ color to brighten the dish and something to provide a foil for the savory proteins. Happily, the first of the English peas arrived in kitchen the same morning as the sturgeon, so we were off to the races. The peas were lightly smashed, then sautéed in VOO with a small dice of confit garlic, tomato and carrot, emulsified with a spoonful of fragrant spring vegetable stock. Pancho then made a vibrant pea purée (with a touch of spinach to hold the color) and a broken vinaigrette of VOO and port reduction.

Pancho and I did a little spring jig over this dish ~ he while plating it, me while eating it. Drew just stood back, arms folded, big smile.

Of all the reasons I’ve come to see Ryan as a great chef, the talent he’s nurtured in this team resonates the most. Encouraging them to shine isn’t just his way of honoring his own mentors, though it certainly does that in spades. It’s also a reminder that for all the years of hard work it takes to become great at this profession, cooking like this is all about love, and respect.

Kumar is one of the most beloved and well known textile designers in India at the moment ~ reviving hand loomed textile traditions one village at a time. Her work is sold at the V&A in London, at the Met and Guggenheim in New York...and now at Studio Barndiva!

New Fall Menu

The garden dictates changes to our menus virtually every week of the year. But while there’s no hard line in the sand that can be drawn to signal the end of one season and the beginning of the next, some weeks, like this one, the juggling we do to accommodate the superlative produce our farmers bring to the kitchen door is more dramatic than others.  While heirloom beans, sprouts, quince, and pancetta all started to arrive in abundance this week, so did the last of the heirloom tomatoes. The crazy weather that had left Lazero’s fig trees still bursting with fruit also had chestnuts falling from our trees on the ridge in Philo … I know, there are worse problems to have in life. But it makes calling the menu below the "definitive Autumn" menu a bit of a stretch.

I love this time of year for the crisp snap to the mornings, coming in from the chill to a kitchen fragrant with the smell of quince.  Creamy Mushroom Ragù and classic Frisée salads with lashings of bacon. Lobster Risotto scented with preserved lemons. Ryan’s incandescent Cauliflower Velouté with caramelized florets, raisins, and brown butter almonds (he calls it Trail Mix).  The menu is a blessing right now, a garden-sensitive work in progress, the first of the delicious holiday season to come.

Sous Vide Pork Belly

I did not come to sous vide cooking as a fan, quite the opposite.  The idea of using a plastic pouch to cook ~ instead of relying on traditional methods that depend upon smell, touch, and taste ~ just seemed a bit of a cop out, little more than an upscale version of Uncle Ben’s ‘boil in a bag.’ Where's the magic?

But just as there’s science in alchemy, I’ve come to see that suspending food in plastic and setting it loose in a constant swirl of soft heat actually takes a page from some of the oldest culinary traditions in history which called for wrapping or burying foods and slowly cooking them for long periods, the better to capture the essence of their flavor.

Chef Ryan has always said that for him sous vide isn’t about convenience so much as consistency, that and the ability to control the outcome of a dish in a way that extends the potential of each ingredient. For a little light reading he gave me Thomas Keller’s “Sous Vide,” a trade manual Keller wrote for PolyScience a few years back which succinctly explains the complex way a precise control of pressure, temperature and time allows a chef to infuse flavor (which even with marinades is often lost to the braising liquid) and enhance texture (which over the course of cooking heat can easily destroy).

The temperatures used in sous vide are always kept below a simmer ~  but within that lower range they vary greatly depending on the type and cut of the protein, the cellular density of the vegetable, and what, if any, other cooking techniques you intend to use in the dish. With Pork Belly, where you have an inordinately high fat to meat ratio to begin with, the object is to use the fat primarily to flavor the meat, delivering a finished dish with a perfect crackling that beguiles the mouth when you bite through it to the soft fragrant depths below. Too fatty, too dry, not enough flavor, and it's game over.

For Dish of the Week, Chef cooked pork belly sous vide for 12 hours in a heady mix of shaved apple (Cox's Orange Pippin from the farm), white wine, garlic, leeks, rosemary and carrots.

Two things were notable when he finally lifted the pouch from the water: the first was the degree to which the long cooking process had allowed the meat and fat to take on the flavors of the marinade, all but melding them together.  The second was that by taking the pork from this nearly gelatinous state and immediately chilling it (above left), Chef was able to reduce the fat as he compressed the meat into perfect shape and portion sizes, essential for a dish which can easily become overly rich. He then refrigerated it again ~ cooling the pork before letting it hit the hot skillet which resulted in a perfectly crisp surface without pulling any moisture from the meat.

To accompany the Pork Belly, Andrew, Chef's entremetier, caramelized cauliflower florets in VOO before adding raisins, capers, herbs and shaved almonds.

The final component to this starter was a finishing ‘sauce,’ something which could cut through the richness of the belly but would not overwhelm the sweet, sharp and crunch of the cauliflower nest. For this Chef reduced Pinot Noir to the syrup stage, then broke it with Preston Olive Oil, producing a gorgeous, deep red vinaigrette.

Slow Cooked Pork Belly served on a whoosh of Cauliflower Purée with Caramelized Cauliflower Florets, Capers, Raisins, Almonds and Pinot Noir Vinaigrette….15 hours start to finish…done.  To perfection.

There’s an old-fashioned capacity for heartfelt joy embedded in the DNA of Healdsburg which makes it the perfect place to get married. This is not news to those of us who live and work here. But thankful as we are for the visitors who keep our local economy humming all Summer and Fall, boy, do we look forward to the Holidays and Winter. That's when the homegrown parties begin, the ones which seem, more than any others, to refresh the spirit and invigorate the soul.

Saying thanks to co-workers, gathering family and friends together to eat and drink with joy, kick back, maybe even dance  ~ all used to be part of what we all did at the end of every year to celebrate the fact that we were still standing.  Resourceful and thankful. We still should be.

There’s a particular magic to the fêtes we throw here in the Studio we’d love for you to experience. Doesn't matter if you come for a night of cocktails and hors d'ouvres or sit down to one of Chef Ryan's incomparable menus. We're especially proud of our staff, as committed as we are to supporting this food shed and all those who work within it. An art gallery is a great place to spend an evening. And this space sings.

Bacon Wrapped Pork with Wild Ramps

Ramps were the first food I ever ate that was foraged. I was 17, and under circumstances best left to the ‘can you believe we did that’ file, found myself at some godforsaken campsite in the wilds of Mendocino with my two best friends, hungry, hungover and broke. If memory serves we had some stale French bread and a cheap bottle of red we’d stolen from the buffet table at a Peace and Freedom party two nights before, along with a few mangy carrots and a handful of old potatoes we’d caged from a grocery store on the coast. They wandered off to find some wild sage to flavor the soup ~ for some reason I was entrusted with making a fire ~ returning with a handful of sorry looking things that resembled tiny mutant leeks.

They were, in fact, a form of wild leek, but sorry they were not, packing incredible flavor that gave our simple repast a woody depth redolent of garlic. The rest of the night ended up being memorable for a number of reasons I’d just as soon forget ~ but damn if it wasn’t the best soup ever.  

Ramps belong to the Allium family that also includes garlic, leeks, scallions and onions. They are also known as ramsons, wild garlic, and what the French elegantly call ail des bois for their propensity to grow in shaded wooded glades. They generally have a more intense garlic odor than taste, though towards the end of their extremely short growing season (delayed this year by the rain) the bulbs can pack a nice garlicky heat.  Chef pays as much attention to the flat scallion-like green tops as he does the dainty tuber shaped bottoms. In this week’s Dish of the Week he used entirely different prep techniques for each.

The tops ended up on the bottom of the dish, after they had been sautéed in VOO,  chopped and then formed in a ring mold to make a soft round green bed for the pork.  The bulbs and purple striated stalks, lightly pickled in mustard seed, fennel, sugar and champagne vinegar, ended up on top, finishing the dish with bright crunchy little bites.

Gleason Ranch is producing superb animals these days; pork that is full of flavor, bursting with juice. By wrapping the tenderloin in strips of bacon ~ which crisp during the cooking process ~ Ryan extended the long grassy flavors of the meat, adding a salty crunch without losing one bit of wonderful porky flavor.  Top to bottom this was a subtle dish of relationships  ~ ramps on ramps, pork in pork ~ which, for all its final elegance and finesse, had real down-home ~ dare we say campfire ~ appeal.

New Summer Cocktails - just in time for Father's Day!

When our bartenders presented some potential summer cocktails for me this week,  I wasn't surprised to find all three hadn't started life behind the bar, but in the garden and the kitchen. These guys focus a lot of their considerable energy taking classic spirit combinations and putting original spins on them. I half expect to find them chanting under a full moon before long, because in truth alchemy is what they're after. This week I tasted and gave an enthusiastic thumbs up to 2 new rum cocktails, one of them a Kumquat concoction as pretty as it was potent,  and a kick ass blended whiskey hi-ball. Two Barndiva classics will also return to the early summer list by popular demand: Dragonfly, Vodka based,  and Weapon of Choice, which takes a Sherlock Holmes approach to  Pimms Cup.

Sam is our jam guy, forever adapting his Mum’s gold star recipes with a view toward extending their flavor profiles for cocktails. The kumquat marmalade he made for Start Your Engines is wonderful, a perfect balance of citrus sharp fruit to honeyed sweetness.  It flavors the drink with an instant limey thump ~ what Geoff calls “shuddery” ~ that's quickly followed by residual sweetness hiding in the pulp, which softens the bite. Using marmalade in drinks is tricky ~ the last thing you want is gunk at the bottom of the glass ~ but while the drink has a bit of pressed kumquat rind in it (which you want, trust me) the cocktail, which uses both Matusalem Platino with Agua Libre “fresh squeezed” California Raw Sugar Cane Rum with Dimmi and small batch pineapple gum spirit, has flavors that are anything but muddled. A great starter drink for an evening you hope will go the distance.

Rum, this time infused with whole vanilla bean, is also the core spirit of Thizzy, though the star of this gorgeous drink is a housemade strawberry consommé,  filtered into an old fashioned coupe with the rum, then topped with Moscato d'Asti.  I always forget how much I love this Italian dessert wine ~ try serving a bottle of it sometime at the end of a dinner party with chocolate covered biscotti for dipping.  In this drink, the strawberries and effervescent wine play off each other in much the same way peaches work to make a Bellini memorable, though more is happening here. The rum stays well back on the palate allowing the scent of fresh chocolate-orange mint from the garden to predominate before the first sip full of fruit, spice, rum and sparkling wine takes over. The lively aroma of this drink does what a great cocktail must: open the senses to everything that follows.

You don’t have to be Irish to feel the power of the muse after you finish Why Be Mad, the third new cocktail on the list. A complex blend of three whiskeys brought together in a Stephan Ravalli inspired brown-butter wash, it’s a sexy and wild potion that derives its liquid poetry from the combined flavors of smoky peat (from the Irish Whiskey), spice (from the Rye), and smooth oak (courtesy of American bourbon), enlivened with Bundaberg Ginger Beer. If the poetic spirit does come a' calling after drinking one or two of these, perhaps riding on the scent of freshly ground cinnamon or hiding in the heat of the candied ginger that garnishes the drink, fear not:  it’s more likely you will start channeling the joyous mayhem of E.E. Cummings rather than the angry rage of James Joyce. Fact is, you can’t be mad at anything after drinking this Hi-ball, hence the name.  If you are, I suspect you have some problems no drink can fix.

There's a round trip ticket to Cusco at stake, not to mention a bit of glory, so come in and put the boys through their paces. If the cocktail they create for you wins, drinks on the house (and a postcard from the Andes).

Crispy Pork Belly with Arugula Purée, Kumquat, Pickled Red Onion and Quail Egg

I love how Fergus Henderson (The Whole Beast: Nose to Tail Eating) describes the “not quite meat not quite fat” quality of pork belly: “ It’s onomatopoeic ~ belly is like it sounds ~ reassuring, steadying, and splendid to cook due to its fatty nature. It’s not a cut to rush and with that a certain calm is imbued in the belly.”  Of the diner, that’s for sure.

The Pork Belly craze that swept the restaurant world the past few years gave rise to a lot of awkward pairings which either over~played the richness of the cut or tried to disguise it ~ chocolate covered pork belly anyone?  The desire to press PB to reduce the fat isn’t always the answer either, as in doing so you loose the fluffy quality of one layer melting into the next. Why disguise the fatty attraction of the cut ? Just remember a little bit of belly goes a long way and enjoy.  Pork belly makes the most delicious first course.

Ryan’s take on it for dish of the week was to celebrate what we hope is around the corner ~ a glorious spring!  He choose condiments with vibrant colors and bright flavors, but used them with discretion, paying homage to the full, rounded and soul satisfying essence of PB, especially for carnivores of the nose to tail variety.

Kumquats, wonderfully bright and bitter, wake the taste buds up in a way that makes all flavors that come into contact with them all the more distinct.  A citrus fruit the size and shape of an olive, the oval kind we serve raw this time of year has an edible sweet rind. Pairing thinly sliced kumquat with the pickled crunch of tagliatelle of red onion and a smooth peppery green arugula purée was a brilliant way to isolate the richness of the belly while allowing its flavor profile, with hint of maple syrup in the finish, to sing.

Tommy paired the Pork Belly with a 2006 Kerpen Riesling from Wehlener Sonnenuhr,“the Sundial of Wehlener,” Sonnenuhr meaning sundial, Wehlener being the town where the grapes are grown. The vineyard is so named because in 1846 the first man to plant grapes in this part of the Mosel Valley, Jodocus Prüm, painted a giant sundial on the face of the highest cliff of this rocky outcrop, perhaps to celebrate the sheer insanity of trying to grow anything where there was no topsoil and only shards of pure blue slate. His folly was our gain ~ and 200 years on Riesling from this area is one of the finest expressions of terrior in winedom.

Like fois gras, Tommy believes Pork Belly calls for a wine with sweetness and viscosity, and a good bit of acidity to cut through that richness ~ the same reasoning behind Chef’s choice of pickled onion and raw kumquat.  He is especially partial to Rieslings from this part of Germany when they are properly aged, as only then do they begin to develop the interesting aromas that make this varietal especially enticing. It’s called having a petrol nose, what the French call goût de pétrole. Petrol, kerosene and rubber are all aromatic attributes that are highly sought after in a mature Riesling.

Chef Ryan's Mini Quail Egg Tartine

Dish of the Week There's a single moment in any great meal when you hit the sweet spot and get all elements you're loving on the plate together in one perfect mouthful.  Our Quail Egg Tartine was the perfect 'breakfast' moment writ large: fried egg, perfect toast, buttery tomato, salty balcony crunch. The lightly  herbal and  floral notes of cilantro and Rapini kept the rich umami ingredients distinct, until  the last instant, when the creaminess of the egg yolk brought it all home in a Pigs & Pinot moment everyone who experienced it described as  "pure bliss."

Charlie Palmer's Pigs & Pinot ~ A Healdsburg Favorite

OK, so Dish of the Week was actually Bite of the Week ~ a Proustian breakfast moment Chef served to 300 Friday night at Pigs & Pinot, Charlie Palmer’s sold-out signature food event that takes over Healdsburg in mid-March. For those of you who grew up in the age of Top Chef ad infinitum and innumerable  foodzines and foodblogs, it may be hard to believe that once upon a time the cult of the celebrity chef didn’t exist. Charlie Palmer didn’t invent the concept, but he was one of the first American chefs to draw crowds to his restaurant Aureole in NYC by sheer virtue of his talent alone.  Back then (no, I wasn't going to say "in the good old days”) reputations could only be built by reviews and word of mouth. Palmer generated a great deal of both. In the years since he has built a mini-empire of restaurants and hotels that rivals Nobu’s in size if not influence. What Nobu is to black cod (basically on the back of one recipe), Charlie is to pork (significantly, the entire animal).

I like Pigs & Pinot. It supports a number of worthy charities while functioning as it was primarily intended ~ a two day publicity venture for Palmer and Co. What I like best about it is the classy way it goes about making the connection between food and wine while strengthening a good swath of the local economy. Even as he burnishes his own brand, Palmer manages to advance a quality driven definition of the word sustainable in an age where even the best restaurants are struggling with the temptation to fudge standards in order to survive. Any week of the year around here you can throw a stick and hit a food or wine event; few of them put the whole animal in focus to the extent Pigs & Pinot does. This is a message not lost on the 500 ticket holders that flooded the Hotel Healdsburg 1 & 2 this past weekend, with reportedly double that number on a wait list every year.  The remarkable world-class selection of Pinots guests get to taste are the sizzle, but make no mistake, the meat of this event ~ literally and figuratively ~ is the whole hog.

Most of the press Palmer generates focuses on Saturday, when “celebrity” Chefs from all over the country land in Healdsburg to flex their culinary muscle. But if you live here the real fun is watching the local talent go head to head on Friday night. Though every one of these participating local Chefs will tell you it's not a competition, that they are just ‘doing their thing,’ with few exceptions each secretly hopes theirs is the best pork mouthful of the night. And why shouldn’t they?  Our Chefs are a remarkably convivial group, but the fun at these events is upping your game as you coolly hang out in the hood with guys you compete with on a daily basis. The fact that there is an abundance of talent to go with a healthy dose of competition is what makes Healdsburg a dining Mecca. That nobody cops to being competitive is just part of the charm of living in the country.

In this respect Ryan is no exception, except to the extent that his competitive drive comes more from pride, than ego. He always defers when appreciative diners  ask him to come out and meet them, and while he's forthcoming with the press he never goes in search of them either. Quite the contrary.  Yet he’ll cook a dish over and over again to get it spot on, then think about it some more before Pancho and the team are put through their paces so it's served consistently the same way, every time, for each and every diner. As chuffed as he was when he won the Top Chef competition at Taste of Sonoma two years ago, he couldn’t wait to get out of there the minute it was over. I  suspect that when (though no fault of his own) he couldn’t defend his title this year, his worry wasn’t what people would think when he didn’t show so much as missing an opportunity to go head to head again with another talented Sonoma County Chef.

Americans have a funny relationship with what is, culturally, our inherently competitive nature. Because we always seem to equate success with money (or its corollary, fame) we are congenitally guilty of making the mistake that whoever has the most marbles when the bell rings has “won.”  I’d go as far as to say that our obsession with money and fame ~ no matter how many ‘unhappy’ rich and famous people are paraded before us ~ borders on being a national illness. The mistake here, to my mind, isn’t so much that we haven’t learned money and fame can’t engender happiness (which deep down we probably know) it’s overrating the ephemeral entity of happiness in the first place. Between happiness and true satisfaction I'll take satisfaction any day of the week. Happiness is a beautiful vagrant, its perfume a scent in the air, music that lifts your heart, the touch of someone you love. All good, but for it even to exist it needs someone to blend the perfume, write the music, become the person you love. True accomplishment, whether building character or just a better mousetrap, is complex, and while luck can play a role it's not a sustaining ingredient the way a combination of passion and patience is. The satisfaction that comes from accomplishment ~ whether it brings you happiness or not ~ resides in the way something is made,  how long you spend refining an idea, how many times you paint over a figure before its heart ~ of joy or darkness ~ appears.

Until six years ago when I took on my latest career incarnation as “restaurateur,” I managed to fashion my life in such a way that whether I succeeded or failed (and I did a lot of both) it was always on my own terms.  Even as my game changed over the years, from academia to photography and journalism, ultimately to design, I mostly avoided the world’s judgment in a way that allowed me to work on the quality of what I was producing without fear an audience of strangers wouldn’t like it. Many people don’t see a problem basing their success on something that’s been copied or stolen from its original source. Maybe that's why the world is filled with such derivative crap.

But food doesn’t wait for that certain someone who understands your aesthetic to fall in love and take it home. What takes years to learn and untold hours to source and cook is consumed in the span of a few minutes. Wham, Bam, the verdict is in.  In the past if someone did not like what I created I could console myself that it "just wasn’t to their taste”, or take the time to improve it. With food every dish and every meal must suit a diners taste each and every time…. because with food the customer is always right. That Ryan knows this and works at making our food ‘right’ for every customer, yet does so in a way where he is consistently challenging himself, pushing his own creative boundaries, is remarkable to me.

As for who actually produced the best pork inspired dish last Friday, while I did not taste everything (an understatement considering how much incredible food was being offered) Dino Bugica’s (Diavolo) black sausage was about the best I’ve ever eaten. This man’s talent in all things charcuterie is a wonder.  Ari Rosen (Scopa) had the most beautifully roasted whole baby pig which, in his inimitable style, he served simply. Cyrus’ Chinese bun was perfect respite just at the moment I was suffering from serious pork fatigue. I did not taste Charlie’s dish ~ his lines were moving at a snail’s pace ~ but the burnished pork bellies turning on the spit behind him in the central courtyard looked utterly mouth-watering.

It was not until I returned to our station that I fully registered how our contribution was going over. Until that moment I hadn't put Barndiva into the competitive mix I had running in my brain, which made it all the more delightful when I saw the faces on the crowds inundating our station. This was a different set of folks than we’d had during the first hour of the evening, when everyone was moving through the rooms tasting things for the first time. While many had returned hoping for another taste, most were new faces, that all opened with the same heartwarming gambit: “I heard from everyone this was the best thing here tonight.”

Very cool, right? But the most enjoyable moment of the night was still to come. As I stood watching I was approached by a couple from San Francisco who had returned to our station for “the final bite of the night.”  I had never met them before and they had never eaten at Barndiva, though the woman  ~ dark haired, very pretty ~ said she read the journal. They were extremely knowledgeable about food ~ off to Chicago in a few weeks “just to eat ” ~ but it wasn’t their erudition on all things culinary that struck me as the conversation moved swiftly from our favorite SF haunts through greatest meals ever, to a surprisingly honest appraisal of why eating out had come to comprise “some of the best moments” of their lives.  Though they were obviously passionate about food, they weren’t precious about what they ate. While the room and the ambiance of a restaurant mattered, connecting with informed but not overbearing servers mattered a great deal more.   Though they weren’t in the business they had, through their travels, begun to understand how hard good restaurants had to work to get it right, especially when it came to sourcing. They were, in short, critical but sympathetic. Standing there in the beautiful din of Charlie’s world the possibility suddenly occurred to me that along with the age of the celebrity chef we may be entering the age of the enlightened diner, people who see their patronage as team support, as crucial to the game as the crowds in a grandstand. Dining out is a collaborative experience; diners should be honestly invested in its outcome. Because it's true, progressive diners ~ like the best fans ~ are  the first ones to tell you when you make a bad play (or dish) but it's their cheers, when they come, that are the ones you most long to hear.
